why don't 2-stroke idle?

i've never owned a 2-stroke, but whenever I'm behind them on the grid, or see them in videos, or at WERA events, they never seem to idle. the rider (or crew chief) is always revving it every 3 seconds. what's the deal?
 
RR ones don't have idle circuits in there carbs for one. The nature of 2 strokes designed for high rpm's causes them to "load up" with fuel at low rpms causing plug fouling issues.
